The vineyard 

For the production of this particular wine we have selected some of the oldest parcels in the Cottà and Pajorè area.

The vinification 

The fermentation and the maceration of the skins takes about 25 days. No selected yeasts are used. The malolactic fermentation happens in French barrels coopered expressively for us by Francois Frères in Burgundy. The wine stays in these barrels for approximately 24-30 months, half of this time on its lees. 25% of the barrels used for aging this wine are new, the remaining 75% have previously been used up to 4 times. There is no filtering and no fining prior to bottling.
The Barbaresco Riserva presents a brilliant deep ruby; initially the nose is dominated by elegant notes of menthol, eucalyptus, licorice and sweet red fruits. With the aging, the bouquet opens up with notes of flowers, sweet spices and "goudron". On the palate it’s refined and velvety but with a good persistence as well as and an elegant nuance of minerals on the finish. The tannins, solid and very refined, are balanced by its richness; red fruits and menthol can be also found as the wine opens up in the glass.

The vintage 

2005 - During the winter we had some snowfalls in December, followed by a dry January and February, April brought lots of rain (150mm). The summer was warm and quite dry, in September there were some rainy days ( 80 mm ), for five days in October we had heavy rain from 9 th to 14 th ( 110 mm ). The optimal temperatures speeded up the vegetative growth of the plants, without originating any kind of phytopathalogic problems. The limited quantity of yield per plant, due to the severe green harvest during the summer, enabled us to reach the perfect maturity a bit earlier than the previous year: the harvest took place rapidly and on time. The last harvest was the Nebbiolo da Barbaresco, which ended on the 8 th of October, only one day before the harmful rainfalls began.
